Ingredients:

  • 1 cup Rolled Oats
  • 1/2 cup Pea Protein Powder
  • 1/2 cup Cashew Butter
  • 1/4 cup Maple Syrup
  • 1/4 cup ground Flaxseeds
  • 1/4 cup dried Cranberries
  • 1/4 cup Walnuts (chopped)
  • 1 tsp Vanilla Extract
  • 1/2 tsp ground Cinnamon
  • A pinch of salt
  • 2-3 tbsp Desiccated Coconut (for rolling)

Instructions

  1. In a large mixing bowl, combine the rolled oats and plant-based protein powder. Mix well to ensure they're evenly distributed.
  2. Add the cashew butter, maple syrup, ground flaxseeds, dried cranberries, chopped walnuts, vanilla extract, ground cinnamon, and a pinch of salt to the dry ingredients.
  3. Stir all the ingredients together until the mixture is well combined. It should be slightly sticky and hold together when pressed.
  4. Place the mixture in the refrigerator for about 15-30 minutes. This will make it easier to shape into balls.
  5. Once the mixture has chilled, remove it from the refrigerator. With clean hands, take small portions of the mixture and roll it into bite-sized bliss balls. You should be able to make 12-15 balls, depending on the size.
  6. Roll the bliss balls in shredded coconut to give them a delightful outer layer.
  7. If the bliss balls are feeling a bit soft, you can place them in the refrigerator for an additional 15-30 minutes to firm up.
  8. Your protein-rich vegan bliss balls are ready to enjoy! These make for a perfect on-the-go snack, a post-workout energy boost, or a healthy sweet treat. Store any leftovers in an airtight container in the refrigerator for up to a week.
