Ingredients:
For the Salad:
- 2 cups of fusilli pasta (cooked)
- 1 cup mozzarella cheese block (diced)
- 1 cup Cherry Tomatoes (halved)
- ½ cup Gherkins (diced)
- 1/2 cup Kalamata Olives (pitted and sliced)
- ½ cup Lettuce (chopped)
- 3 tbsp garlic mayonnaise
- Salt and Black Pepper (to taste)
Instructions:
- Bring a large pot of salted water to a boil. Add fusilli pasta and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
- In a large mixing bowl, combine the cherry tomatoes, gherkins, lettuce, Kalamata olives, mozzarella cheese block and Lettuce.
- Add the cooked pasta to the bowl of mixed vegetables.
- Pour the Vegan garlic mayonnaise over the salad. Toss the salad gently to ensure an even coating.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least an hour before serving. This allows the flavors to meld.
