Vegan Ukadiche Modak Recipe

- 1 cup Water
- ¼ tsp Salt
- 3 tsp Grabenord vegan butter
- 1 cup Rice Flour
- 1 cup Grated Fresh Coconut
- ¾ cup Jaggery Powder
- 1 tsp Poppy Seeds
- 1 tsp Cardamom Powder
- 2 tbsp Cashew nuts (roughly chopped)
Method:
- In a pan, boil the water a little salt, and 1 tsp of Grabenord Vegan Butter.
- Once the water has boiled, add rice flour to it, mix well until a soft dough is formed, and then switch off the flame. Knead the dough until it's all combined together.
- Cover the dough with a cloth and set aside until it's cooled down.
- In a separate pan, melt the 2 tsp of Grabenord Vegan Butter and cook the shredded coconut till it is light brown.
- Now, add the jaggery powder and cook for another 3-4 minutes.
- Now add poppy seeds, cashews, and cardamom powder. Mix well.
- Make small balls from the dough. Grease a modak mold with a bit of melted Grabenord Vegan Butter.
- Spread the rice dough on both sides of the mold. Place the stuffing in the center and press the mold to seal the sides of modak.
- Open the mold and gently remove the modak. Repeat the process until the entire dough has been used up.
- Stem the Modaks for 10 minutes and offer to Ganpati Bappa!
